Can someone advise on tyre pressures for the road? Looking at the Pirelli website it shows 29/32 front and 23/26 rear which seems low to me? They are on my RR9 blade

It's a balancing act for mileage vs grip. Those pressures will work great on track, but allow the tyre to deform. If you ride them on those pressures on the motorway, you'll square them off really quickly. I adjust according to the riding I'm doing. Tend to put them up to honda's settings of 42/36 on the way to the track on a straightish ride, lower to 36/32 for a windy road and down to the settings you mention for track.

Same as above. Difference between the SC and SP is the SP is bi-compound, so has better longevity on distance riding, but the tech recommendation from pirelli is the same. Would generally choose the SP if you road-ride and the SC for a track only bike (or if you like changing tyres!).

They're second to none in the dry when they're warm, but you'll need to take care and be very smooth if it's cold and wet. Enjoy!
