You need to decide exactly how you want your bike, exhaust etc then fit them, and then get it set up, remaps aren't cheap so you need to have the bike as you want it before taking it, I don't know of any one that would do it

Not my cup of tea but I'd imagine the first step in whatever route you take will be to get rid of the cat by fitting aftermarket headers. The stock headers keep the noise down a lot.

The headers on their own may give you what you want I don't know.

The nuclear option is to fit your headers then a power commander and get someone to write you a custom map. If a performance orientated map still doesn't give you what you want then you could fit a map switch and get the tuner to write you 2 maps....first would be the performance map and then "just for fun" a 2nd map that gives you pops and bangs.

Headers, power commander and a custom map is going to cost you a fair bit.

to me sounds like the engine is either running too rich or the fuel is not burnt properly. You get unburnt fuel in the exhaust whihc pops, bangs and flashes when the ECU sends air to burn it off.
If you have removed the O2 sensor, then this could be the reason.
As an aside I have read people hearing more pops when they change for a louder silencer

I think he wants to achieve pops, bangs and flames not get rid of them.

The flames will be from un burnt fuel on over run, if you still have the cat the system there’s a chance it will melt if you can get anyone to map it to pop and bang.
Sounds like you want a map like the cars? In reality, any place that will say they can map it like that for you isn’t really worth going to as it really defeats the object of mapping a bike as won’t be running to its optimum

I am not 100% sure but I think the pair valve is there to help burn unburned fuel as it enters the exhaust, a lot of people blank these off

Yep spot on, mine are blanked off though and it didn't make any difference to the exhaust sound popping or otherwise.

On the BMW S1000's they pop a little bit but only when in dynamic mode, I think this is achieved via some sort of valve in the exhaust that allows more air in.
