I am booked in on Monday for a pc5 and a
dyno run and custom map and my current rear tyre is a
190/50/17 , I am booked in for new tyres on Wednesday and getting 190/55/17 at the rear will this affect the custom map with the smaller tyre .

No mate; I cant think of a reason why it would. The 55 tyre will lower the gearing a little but have no effect on the fueling.

The 55 tyre will be bigger, not smaller, if that is, you're referring to the rolling diameter which as said will make your gearing taller slightly.
