When I removed the fuel line quick release from my 2015 tank fuel continued to come out the tank which caught me out a bit as I wasn't prepared for it and ran around the garage looking for a contatiner to drain it into. I thought the tank would seal itself when the quick release coupler is removed, it does on my Ducati and just assumed all new bikes have this feature now.

It's meant to, sounds like the seal in your connector hasn't seated right when its disconnected. Options.....re-connect and disconnect a few times and see if that will re-seat the seal or replace the connector with a new one now you have the tank empty and off.

Technique I use when disconnecting the fuel line is to push the 2 ends together firmly first before holding down the clip and pulling apart. I've never had a problem with the connector sealing or being a pain to disconnect with that technique.
