So noticed the brakes have gone off a bit recently so thought would whip the calipers off and have a look...

    Urgh :/

Pads are shot as well ... Brembo pads ... Done barely 8k miles! :(

Plenty of elbow grease sorted the calipers ...

Does anyone know why the pads have worn this way? Very odd.

Wouldn't worry about the pads, they have loads of life in them yet.
The uneven wear may be coming from the pistons slightly sticking. The cleaner ones will actuate further than the stickier ones. Have you noticed any binding on the front brakes suggesting the pistons aren't retracting properly.
I'd imagine after a good clean they will be better - did you push the pistons out further than pictured to clean them and did the seals look ok? Not that it's easy to see but you would see if they had gone as they'd be pushing through around the piston.
I am no expert though so just my experience and opinion!

Yep, shitty sticky pistons will cause uneven pad wear.

As long as you've cleaned the pistons up fully, i.e. you've squeezed the lever with the pads out to expose more of the normally retracted piston and made sure that's cleaned up to all will be well with new pads.

Mine have worn like that too. Both pads have uniform wear across the surface but one is worn down further than the other, think it's a common thing.
What's more worrying is that with your OCD how on earth did you ever let your brakes get that dirty:D

    :D

I've been a bit lazy with the bike lately due to work commitments. That has now been rectified... Spent 4hrs cleaning her today, so she is now spotless.

Par for the course in riding most days unfortunately ... Thankfully no damage done.
