We went to Applecross last year during the Scotland Tour, but unfortunately the cloud cover was a bit low and we didn't get a chance to see it in its full glory. 1 of the most stunning places I have been to still is the loop around Skye. I try to go at least once a year for a long weekend away. The best way up there has to be hugging the west coast from Invarary to Fort William and then the supersonic highway to Kyle of Lochalsh.
